Joan's Favorite Sweet Potato Tzimmes
Ingredients to Serve Twelve

I include this recipe because it is the first (and last) thing I ever wrote by myself using HTM

Plus it's Yummy!


--Eight large sweet potatos, peeled and cut in 1 inch slices
--One large (8 oz.) can undiluted frozen orange juice
--A teaspoon of Apple Pie Spice, or the equivalent in ground cinnamon, allspice, nutmeg, and cloves.
--About 8 carrots, sliced in fingers about 2" long
--One 8 oz. package each of dried prunes and dried apricots

How to Prepare
First, boil the sweet potato slices until slightly soft. Then mix the orange juice with the spices and about 1/2 cup of water, and stir well. Place a thin layer of orange juice mixture in baking dish. Layer sweet potato slices, carrot fingers, prunes and apricots until all are in the dish.

Bake at around 300-350 until well heated. This may also be prepared in a crock pot. Once cooked, it freezes well.

This is not a "raw" dish but it is good, and it is the very first thing I ever programmed all by myself in the htm format around 1995.
